Cast–Iron Cornbread / corn sabayon, whipped sorghum butter

Smoked Halibut Tostada / smoked halibut mousse, avocado, aji amarillo, caviar

Parsnip Agnolotti / leek and kohlrabi foam, truffles, Satsuma preserves, herb oil

Choice of Entrée

Poached Halibut / 24-hour soubise, bok choy salad, mushroom crust, pearl onion

New York Strip / potato fondant, orange-glazed baby carrots, smoked beef fat, truffle butter, beef jus

Pear Mousse Cake / honey poached pears, white peach yuzu gelée, white chocolate, hazelnut, brown butter streusel
